Christie uses her engineering background to help her team understand the science of cellular and acellular agriculture, plant-based meat extruders, and many other necessary technical topics. She recently helped produce the first public review of the technology required to make clean meat a commercial reality, and she also designed the world’s first university course on plant-based meat innovation. She updates us on the course, being taught now at UC-Berkeley, and the latest happenings at The Good Food Institute.
