Dr. Fuhrman, author of Eat to Live, and recurring star in Mariann’s daydreams, has started a new non-profit entitled Nutritional Research Project. For those of you interested in advocating the health side of veganism, this looks like it will be a tremendous resource. Their mission, as stated on their website, is to “support, encourage, and promote clinical research to evaluate the impact of a high nutrient density diet and related nutritional interventions on chronic diseases such as autoimmune illnesses, diabetes, heart disease and cancer.” Goals include initiating and fostering research that demonstrates how a plant-based diet can not only be used to reverse disease, but to “prevent it from ever happening in the first place.” Much like the ones found in Eat to Live, the case studies listed on the website for the Nutritional Research Project are impressive, including over a dozen stories of people from all walks of life who have completely changed their lives for the better thanks to good old-fashioned fruits and vegetables.
Not only are these folks better for it, the animals are too. A compassionate diet for all. Imagine that.
